Culinarinangus – carte blanche to Iñaki Aizpitarte

Espacio Reflex invites Iñaki Aizpitarte, Mugalari (‘border crosser’) to San Sebastián’s Gastronomic Association

From Espacio Reflex we propose in a second cycle of Culinarinangus, a meeting with the artist through a presentation-video and a musical gastronomic performance by the famous international chef, Iñaki Aizpitarte. This event enjoys the collaboration of Sirimiri gastroleku and the Cofradía Vasca de Gastronomía de San Sebastián gastronomic association.

1-Screening of the video “Tocino de cielo” (Piece of Heaven). Director: Nanda Fernandez. Chef: Iñaki Aizpitarte. Time: 12:00 /Place: Sirimiri Gastroleku Calle Mayor 18, 20003 San Sebastián

The video follows Iñaki Aizpitarte’s journey to Andalusia in search of the origin of the tocino de cielo dessert before creating his own recipe. We will have the opportunity to talk to the chef about the secrets of this new interpretation. The perfect event for those who love their puddings, cookery students and inquisitive foodies.

2-Mugalari dinner. Carte blanch to Iñaki Aizpitarte. The theme focusses on the contraband products traded by Mugalaris (‘border crossers’). Time: 21:00 / Place: Cofradía Vasca de Gastronomía Calle de la Subida al Castillo, 2, 20003 San Sebastián

In this gastronomic performance the chef proposes a surprise menu of contraband articles carried back and forth over the Bidasoa border to the accompaniment of his personal vinyl cumbia music collection.

Given the cross-border nature of Iñaki Aizpitarte’s enterprise (Eibar-Hendaye), we suggested that he work with these cross-border elements and products carrying the memory of times of need that also form a part of his own culinary experience.
